Last time I made a smoothie, it didn't turn out so well. So today, I decided to get back on that horse and try it again. This time, my smoothie turned out delicious! Eating healthy while in college is a challenge for everyone, whether you're deciding between the legendary Friday chicken nuggets or staring down the salad bar at the caf or at the grocery store deciding between the cheap ramen or the expensive fruits and veggies.
Today, I had some blackening bananas sitting on my counter. Either I could keep letting them ripen and make them into ice cream later, or use them for breakfast. Since I was already hungry, I decided on the smoothie. I found some lactose-free yogurt at the grocery store down the street, and I had some frozen berries in the freezer that have been in there longer than I care to recall. And, since I always have almond milk on hand, I had all the ingredients for a smoothie. I threw in the berries, the banana, the yogurt, and the almond milk. It was looking pretty good, but I wanted to make it just a little more healthy. So, I pulled my bag of baby spinach out of the fridge and tossed it in the blender.
If you remember my last smoothie experience, adding spinach to my smoothie didn't turn out so well. But this time, with all the fruit and yogurt, I couldn't even taste the spinach. Spinach is a fantastic veggie that you can add to virtually any meal without tasting it. Last night, I put almost three cups of spinach in my scrambled eggs and I couldn't even taste them. Plus, spinach is one of the most healthy foods on the planet! How handy is that information when you're trying to eat healthy, delicious food?
Anyway, my smoothie turned out a deep purple color. It's mostly sweet, but it's a little tart from the frozen berries. If I had some protein powder on hand, I would probably add it, and some fiber and hemp oil, if I really, really wanted to make a killer smoothie. I'll have to remember that next time I go to the store. But this smoothie is healthy, delicious, and fast breakfast that I can take with me to class. And, most importantly, it's not disgusting. Yay!
